  • 1 cup water

Instructions Vegetarian Kofta Curry

1/ In a large bowl combine grated vegetables mashed potatoes breadcrumbs chopped onions cilantro ginger garlic paste, cumin powder, coriander powder red chili powder and salt. Mix well until everything is evenly combined.

2/ Shape the mixture into small round balls or oval shaped koftas. You can lightly coat your hands with oil to prevent sticking.

3/ Heat oil in a deep pan or kadai over medium heat. Once the oil is hot carefully drop the koftas into the oil and fry until they turn golden brown and crispy. Remove them from the oil and place them on a paper towel-lined plate to remove excess oil.

4/ In a separate large pan, heat oil over medium heat. Add cumin seeds cinnamon stick cardamom pods and cloves. Sauté for a minute until fragrant.

5/ Add the chopped onions to the pan and sauté until they become translucent light golden colour.

6/ Add ginger garlic paste and sauté for another minute until the raw smell disappears.

7/ Add coriander powder cumin powder turmeric powder and red chili powder. Mix well and cook for a minute to toast the spices.

9/ Add tomato puree and cook for 2-3 minutes until the raw flavor of the tomatoes is cooked.

10/ Reduce the heat to low and add the whisked yogurt, stirring continuously to prevent curdling.

11/ Add salt and water. Stir well and bring the curry to a gentle simmer.

12/ Carefully add the fried koftas to the curry and let them simmer for 5-7 minutes so they absorb the flavors.

13/ Garnish with chopped cilantro and remove from heat.
