1/ In a large bowl combine grated vegetables mashed potatoes breadcrumbs chopped onions cilantro ginger garlic paste, cumin powder, coriander powder red chili powder and salt. Mix well until everything is evenly combined.

2/ Shape the mixture into small round balls or oval shaped koftas. You can lightly coat your hands with oil to prevent sticking.

3/ Heat oil in a deep pan or kadai over medium heat. Once the oil is hot carefully drop the koftas into the oil and fry until they turn golden brown and crispy. Remove them from the oil and place them on a paper towel-lined plate to remove excess oil.

10/ Reduce the heat to low and add the whisked yogurt, stirring continuously to prevent curdling.

11/ Add salt and water. Stir well and bring the curry to a gentle simmer.

12/ Carefully add the fried koftas to the curry and let them simmer for 5-7 minutes so they absorb the flavors.

13/ Garnish with chopped cilantro and remove from heat.
