1/ Rinse the sushi rice in a fine-mesh sieve under cold water until the water runs clear. Then, cook the rice according to package instructions but use 1 1/4 cups of water for 1 cup of rice.

2/ While the rice is cooking, prepare the sushi vinegar by mixing rice vinegar, sugar, and salt in a small bowl. Heat this mixture in the microwave for about 30 seconds, stirring until the sugar and salt dissolve completely.
